Lemon Lamb Chops With Salsa

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 4 lamb chops
  • 1 lemon, halved
  • 3 tablespoons breadcrumbs
  • 3 fresh tomatoes, skinned and seeded
  • 4 chilies, finely chopped (seeded if desired)
  • 1 tablespoon oregano
  • 1 tablespoon red wine vinegar
  • olive oil

Recipe

  • 1 preheat the oven to 200 c or 400 degrees f.
  • 2 chop the tomatoes to a pulp, then mix in the chopped chillies, oregano, breadcrumbs.
  • 3 season with salt and pepper, if desired.
  • 4 mix in the vinegar and add enough olive oil to make a thick sauce.
  • 5 heat an ovenproof frying pan.
  • 6 season each chop and seal on each side.
  • 7 take the tray off the heat.
  • 8 squeeze over the lemon juice and place the lemon halves in the pan.
  • 9 roast in the oven for 10 minutes.
  • 10 press the lemon halves onto the chops and baste with the juice.
  • 11 roast for another ten minutes or until firm to the touch.
  • 12 serve with the salsa.
