Lemon Lamb Chops With Salsa

Ingredients
- Servings: 4
- 4 lamb chops
- 1 lemon, halved
- 3 tablespoons breadcrumbs
- 3 fresh tomatoes, skinned and seeded
- 4 chilies, finely chopped (seeded if desired)
- 1 tablespoon oregano
- 1 tablespoon red wine vinegar
- olive oil
Recipe
- 1 preheat the oven to 200 c or 400 degrees f.
- 2 chop the tomatoes to a pulp, then mix in the chopped chillies, oregano, breadcrumbs.
- 3 season with salt and pepper, if desired.
- 4 mix in the vinegar and add enough olive oil to make a thick sauce.
- 5 heat an ovenproof frying pan.
- 6 season each chop and seal on each side.
- 7 take the tray off the heat.
- 8 squeeze over the lemon juice and place the lemon halves in the pan.
- 9 roast in the oven for 10 minutes.
- 10 press the lemon halves onto the chops and baste with the juice.
- 11 roast for another ten minutes or until firm to the touch.
- 12 serve with the salsa.
