Mango Chutney & Lamb Medallions

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs lamb tenderloin, boneless
  • 2 tablespoons butter
  • 1/2 cup whipping cream
  • 1/4 cup mango chutney, chopped finely
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • steamed rice
  • 1/8 cup green onion, thinly sliced

Recipe

  • 1 cut lamb tenderloin into medallions.
  • 2 sprinkle salt and pepper on lamb.
  • 3 add butter and quickly brown lamb medallions in pan over medium-high heat.
  • 4 remove lamb from heat and keep warm.
  • 5 add whipping cream to pan and bring to a boil.
  • 6 add chutney to cream mixture, mix well and pour over medallions.
  • 7 cover and bake at 350 degrees for 20 minutes.
  • 8 serve medallions over rice with sauce spooned on top- followed by a dollop of extra chutney and green onions to garnish.
