Maple Bourbon Lamb Chops

Total Time: 9 hrs Preparation Time: 1 hr Cook Time: 8 hrs

Ingredients

  • Servings: 6
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon fresh ground black pepper
  • 6 lamb loin chops (1-inch thick)
  • 2 tablespoons unsalted butter
  • 2 medium onions, finely chopped
  • 1/2 cup ketchup
  • 1/2 cup bourbon
  • 1/4 cup pure maple syrup
  • 1 teaspoon tabasco sauce
  • 1 teaspoon dry mustard
  • 1/2 cup beef broth

Recipe

  • 1 heat the oil in a large skillet over high heat.
  • 2 sprinkle the salt and pepper evenly over the lamb chops and add to the skillet.
  • 3 brown the chops on both sides, adding a few at a time, being careful not to crowd the pan, and transfer to the insert of a 5- to 7-quart slow cooker.
  • 4 melt the butter in the skillet over med-high heat.
  • 5 add the onions and sauté until they begin to soften, about 5 minutes.
  • 6 add the remaining ingredients and scrape up any browned bits from the bottom of the pan.
  • 7 transfer the contents of the skillet to the slow cooker.
  • 8 cover and cook on high for 3-4 hours or on low for 6-8 hours.
  • 9 skim off any fat from the top of the sauce.
  • 10 serve from the cooker set on warm.
