Maple Bourbon Lamb Chops

Ingredients

- 2 tablespoons olive oil
- 1 1/2 teaspoons salt
- 1/2 teaspoon fresh ground black pepper
- 6 lamb loin chops (1-inch thick)
- 2 tablespoons unsalted butter
- 2 medium onions, finely chopped
- 1/2 cup ketchup
- 1/2 cup bourbon
- 1/4 cup pure maple syrup
- 1 teaspoon tabasco sauce
- 1 teaspoon dry mustard
- 1/2 cup beef broth
Recipe
- 1 heat the oil in a large skillet over high heat.
- 2 sprinkle the salt and pepper evenly over the lamb chops and add to the skillet.
- 3 brown the chops on both sides, adding a few at a time, being careful not to crowd the pan, and transfer to the insert of a 5- to 7-quart slow cooker.
- 4 melt the butter in the skillet over med-high heat.
- 5 add the onions and sauté until they begin to soften, about 5 minutes.
- 6 add the remaining ingredients and scrape up any browned bits from the bottom of the pan.
- 7 transfer the contents of the skillet to the slow cooker.
- 8 cover and cook on high for 3-4 hours or on low for 6-8 hours.
- 9 skim off any fat from the top of the sauce.
- 10 serve from the cooker set on warm.
