Maple Brined Swine

Ingredients

- 1/3 cup pure maple syrup
- 2 tablespoons red onions, grated
- 2 teaspoons dijon-style mustard
- 2 teaspoons soy sauce
- 1 teaspoon worcestershire sauce
- 1 teaspoon fresh lemon juice
- 2 garlic cloves, minced
- 1/4 teaspoon pepper
- 4 -6 lamb chops
Recipe
- 1 combine marinade ingredients in a baking dish or ziploc bag and mix well.
- 2 place lamb chops into marinade and allow to brine for at least 3 hours but preferably overnight for best flavour.
- 3 broil chops in the oven, 3-5 inches from element, until one side is brown and then flip to brown other side.
- 4 or grill chops over medium heat, until browned on one side and then flip to brown other side.
- 5 note: be sure not to overcook your lamb to keep it juicy and tender. lamb is best when cooked to medium doneness - 160°f on a meat thermometer.
- 6 perfectly cooked lamb should have a slight hint of pink in the center.
