New Orleans Lamb Gumbo

Ingredients

- 1 lb lamb tenderloin
- nonstick cooking spray
- 1 tablespoon butter
- 2 tablespoons all-purpose flour
- 1 cup water
- 1 (16 ounce) can stewed tomatoes, undrained
- 1 (10 ounce) package frozen cut okra
- 1 (10 ounce) package frozen succotash
- 1 beef bouillon cube
- 1 teaspoon black pepper
- 1 teaspoon hot pepper sauce
- 1 bay leaf
Recipe
- 1 cut lamb into 1/2-inch cubes.
- 2 spray large dutch oven with cooking spray.
- 3 heat over medium heat until hot.
- 4 add lamb; cook and stir 4 minutes or until lamb is browned. remove lamb from dutch oven.
- 5 melt butter in same dutch oven. stir in flour.
- 6 cook and stir until mixture is dark brown but not burned.
- 7 gradually whisk in water until smooth.
- 8 add lamb and remaining ingredients.
- 9 bring to a boil. reduce heat to low; simmer 15 minutes.
- 10 remove bay leaf before serving.
