New Orleans Lamb Gumbo

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 lb lamb tenderloin
  • nonstick cooking spray
  • 1 tablespoon butter
  • 2 tablespoons all-purpose flour
  • 1 cup water
  • 1 (16 ounce) can stewed tomatoes, undrained
  • 1 (10 ounce) package frozen cut okra
  • 1 (10 ounce) package frozen succotash
  • 1 beef bouillon cube
  • 1 teaspoon black pepper
  • 1 teaspoon hot pepper sauce
  • 1 bay leaf

Recipe

  • 1 cut lamb into 1/2-inch cubes.
  • 2 spray large dutch oven with cooking spray.
  • 3 heat over medium heat until hot.
  • 4 add lamb; cook and stir 4 minutes or until lamb is browned. remove lamb from dutch oven.
  • 5 melt butter in same dutch oven. stir in flour.
  • 6 cook and stir until mixture is dark brown but not burned.
  • 7 gradually whisk in water until smooth.
  • 8 add lamb and remaining ingredients.
  • 9 bring to a boil. reduce heat to low; simmer 15 minutes.
  • 10 remove bay leaf before serving.
