Not Really Jambalaya

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • 2 tablespoons vegetable oil
  • 4 chicken breast halves, boneless, skinless cubed
  • 1/4 cup butter
  • 1 onion, finely chopped
  • 1 bunch fresh parsley, minced
  • 1 1/2 teaspoons garlic, chopped finely
  • 5 cups chicken broth
  • 1 (1 lb) package smoked sausage, quartered lengthwise and sliced
  • 2 cups rice, uncooked

Recipe

  • 1 heat the vegetable oil in a large pot over medium-high heat.
  • 2 cook the chicken until no longer pink in the center and the juices run clear, 3 to 5 minutes.
  • 3 remove from pot and set aside.
  • 4 melt the butter in the large pot.
  • 5 cook the onion, green onion, and parsley in the butter until the onions begin to soften, 4 to 7 minutes.
  • 6 stir in the garlic and cook until brown, 3 to 4 minutes.
  • 7 add the chicken broth, cooked chicken, sausage, and rice; bring to a boil for 2 minutes and then reduce heat to medium-low.
  • 8 cover and simmer for 1 hour.
  • 9 do not remove cover or stir while simmering.
  • 10 serve hot.
