Pepper-rubbed Lamb Chops

Ingredients

- 1 teaspoon ground cumin
- 1 teaspoon salt
- 3/4 teaspoon black pepper, coarsely crushed
- 3/4 teaspoon pepper, coarsely crushed
- 1 pinch cayenne pepper
- 2 teaspoons ground coriander
- 4 cloves garlic, finely chopped
- 2 tablespoons olive oil
- 4 lamb chops, about 3/4-inch thick
Recipe
- 1 heat broiler.
- 2 stir together cumin, salt, black pepper, pepper, cayenne, coriander, garlic, and olive oil in small bowl until well mixed.
- 3 rub on both sides of chops.
- 4 broil lamb chops 3 inches from gas broiler or 1-1/2 inches from electric broiler, turning once, until crispy on the outside and still slightly pink near bone, about 15 minutes total cooking time.
