Italian Sausage Soup

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 1 lb italian sausage, casings removed
  • 1 1/2 cups onions, chopped
  • 5 cups chicken broth
  • 1 (28 ounce) can diced tomatoes
  • 1 teaspoon basil, chopped
  • 1 cup elbow macaroni
  • salt and pepper

Recipe

  • 1 heat oil over medium heat in 4 to 6 quart stock pot.
  • 2 add sausage and onions and cook, stirring occasionally with wooden spoon to crumble sausage, until onions are transparent.
  • 3 add broth, tomatoes and basil and bring to boil.
  • 4 add macaroni and salt and pepper to taste.
  • 5 reduce heat to low and simmer partly covered, until macaroni is tender, about 25 minutes.
