Maple Glazed Lamb Chops

Ingredients

- 4 boneless center-cut lamb loin chops
- kosher salt & freshly ground black pepper
- 1 tablespoon olive oil
- 2 tablespoons balsamic vinegar
- 2 teaspoons dijon mustard
- 1/4 cup pure maple syrup
- 1/4 cup low sodium chicken broth, canned
Recipe
- 1 heat a large skillet over medium-high heat.
- 2 dry the lamb chops well and season with salt and pepper, to taste.
- 3 add the oil to the pan and heat
- 4 add chops and brown each side.
- 5 transfer to a plate and keep warm.
- 6 pour off the excess oil from the pan.
- 7 add the vinegar, and return the pan to the heat and use a wooden spoon to scrape up any brown bits that cling to the pan.
- 8 stir in the mustard, maple syrup, and chicken broth, along with any juices from the lamb chops.
- 9 cook over high heat until the mixture is syrupy, about 5 minutes.
- 10 spoon over lamb chops or serve on the side.
