Lamb Shank Dinner

Ingredients
- Servings: 4
- 1 tablespoon butter 
- 1 tablespoon oil 
- 2 teaspoons madras curry powder 
- 4 lamb shanks 
- 1 onion, finely chopped 
- 2 cups chicken stock 
- 3 carrots, cut into chunks 
- 2 potatoes, cut into quarters 
- 1 tablespoon fruit chutney 
- 2 cups green peas, cooked 
-  parsley, chopped, to garnish 
Recipe
- 1 heat butter, oil & curry powder in a heavy pan & slowly brown lamb shanks on all sides. 
- 2 add onion, stock, carrots & potatoes. 
- 3 bring to the boil, then cover & simmer for 1 hour or until shanks are tender. 
- 4 stir in fruit chutney & peas and heat through, add salt & pepper to taste and sprinkle with parsley to serve.
