Lamb Shoulder Bake With Dried Apricots

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 6
  • 1 large onion, chopped
  • 3 tablespoons olive oil
  • 1 boneless lamb shoulder, cut into cubes (about 3 pounds)
  • 1 teaspoon cumin
  • 1 teaspoon cinnamon
  • 1 teaspoon coriander
  • salt and pepper
  • 1/2 cup dried apricot, halved
  • 1/4 cup orange juice
  • 1 tablespoon ground almonds
  • 1 teaspoon orange zest
  • 1 1/4 cups chicken broth

Recipe

  • 1 in a large skillet, saute onion in oil, until tender.
  • 2 add the lamb, cumin, cinnamon, coriander, salt and pepper.
  • 3 cook and stir for 5 minutes, or until meat is browned.
  • 4 add apricots, orange juice, almonds and orange peel.
