Marinated Lamb Roast

Ingredients

- 1/2 cup molasses
- 1/2 cup dijon mustard
- 1/4 cup tarragon vinegar
- 3 -4 lbs boneless lamb loin roast
Recipe
- 1 in large plastic bowl, combine molasses, mustard and tarragon vinegar; mix well.
- 2 add lamb to molasses mixture, turning to coat all sides.
- 3 marinate 1 to 2 hours at room temperature or overnight covered in refrigerator, turning several times.
- 4 heat oven to 325 degrees.
- 5 remove lamb from marinade; reserve marinade.
- 6 place lamb in shallow roasting pan.
- 7 cook for 1 to 2 hours or until meat thermometer inserted into thickest part of roast reaches 160 degrees, basting with marinade* every 30 minutes; discard remaining marinade.
