Marinated Lamb Roast

Total Time: 2 hrs 10 mins Preparation Time: 10 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 1/2 cup molasses
  • 1/2 cup dijon mustard
  • 1/4 cup tarragon vinegar
  • 3 -4 lbs boneless lamb loin roast

Recipe

  • 1 in large plastic bowl, combine molasses, mustard and tarragon vinegar; mix well.
  • 2 add lamb to molasses mixture, turning to coat all sides.
  • 3 marinate 1 to 2 hours at room temperature or overnight covered in refrigerator, turning several times.
  • 4 heat oven to 325 degrees.
  • 5 remove lamb from marinade; reserve marinade.
  • 6 place lamb in shallow roasting pan.
  • 7 cook for 1 to 2 hours or until meat thermometer inserted into thickest part of roast reaches 160 degrees, basting with marinade* every 30 minutes; discard remaining marinade.
