Never-the-same-twice Meatloaf

Total Time: 1 hr 25 mins Preparation Time: 25 mins Cook Time: 1 hr

Ingredients

  • 1/2 lb lean ground beef
  • 1/2 lb ground lamb or 1/2 lb ground veal
  • 1 onion, chopped
  • salt and pepper, to taste
  • 1 jar homemade or prepared chutney
  • 2 slices hearty bread
  • 1/2 cup homemade or prepared barbecue sauce

Recipe

  • 1 soak slices of bread in chutney until soft and combine with remaining ingredients.
  • 2 mix well, and place in a meatloaf pan.
  • 3 bake at 350°f for 45 minutes.
  • 4 remove from oven and, with the back of a teaspoon, make a shallow ôtrenchö, lengthwise, on top of the meatloaf, and fill the 'trench' with barbecue sauce.
  • 5 return to the oven and bake for another 15 minutes.
