Lamb With Marmalade Sauce

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 2 lbs boneless lamb, cut into 3/4 " cubes
  • 2 onions, chopped
  • 1 clove garlic, minced
  • 3 tablespoons butter
  • 2 cups bitter orange marmalade (available in specialty shops)
  • 3 tablespoons malt vinegar
  • 2 tablespoons fresh mint, chopped (or 2 tsp dried)
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • pepper

Recipe

  • 1 melt the butter, over moderate heat, in a large saucepan, add the onions& garlic.
  • 2 cook until just beginning to brown-5 minutes.
  • 3 add the lamb and cook until browned lightly 8-10 minutes.
  • 4 add the marmalade, vinegar, mint, salt& cayenne.
  • 5 cook, stirring once in a while, covered for about 20 minutes.
  • 6 season to taste.
