Peanut And Spice-covered Lamb Tenderloin

Ingredients

- 1 1/2 tablespoons olive oil
- 1 lamb tenderloin, rinsed and patted dry (1-1 1/4 lbs)
- 1 teaspoon ground ginger
- 1 teaspoon ground coriander
- 4 tablespoons peanuts, finely chopped
- 1 teaspoon kosher salt
- 2 teaspoons honey
- 2 teaspoons dijon mustard
Recipe
- 1 preheat oven to 350°f
- 2 in a 12-inch ovenproof sauté pan, heat olive oil over medium-high heat. add lamb, and brown all sides, turning often to prevent burning, about 3 minutes total.
- 3 in a small bowl, combine ginger, coriander, peanuts, and salt; mix well, and spread out on a baking sheet. set aside.
- 4 place honey and mustard in another small bowl; stir to combine. with a rubber spatula, spread honey mixture all over lamb, coating lightly.
- 5 roll lamb in nut mixture, pressing firmly to adhere. return lamb to sauté pan, and transfer to oven.
- 6 finish cooking, 25-30 minutes or until internal temperature of lamb registers 155f on a meat thermometer.
- 7 remove from oven; let sit 5 minutes. cut into 1/4-inch thick slices; sprinkle with any topping that has fallen off.
