Idaho Potato Chowder

Ingredients
- Servings: 4
- 3 slices bacon, diced
- 8 green onions, sliced
- 2 garlic cloves, minced
- 3 cups potatoes, diced
- 2 chicken bouillon cubes
- 2 cups water
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups milk
- 3 tablespoons flour
- 1 tablespoon parsley
Recipe
- 1 cook bacon, reserve drippings.
- 2 saute green onions and garlic in drippings until tender.
- 3 add the potatoes, bullion, water, salt and pepper.
- 4 bring to a boil.
- 5 simmer, covered for 20 minutes, or until potatoes are tender.
- 6 whisk together milk, flour and parsley.
- 7 stir into potato mixture.
- 8 cook until thick.
- 9 add bacon and serve.
