Idaho Potato Chowder

Total Time: 45 mins Preparation Time: 25 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 3 slices bacon, diced
  • 8 green onions, sliced
  • 2 garlic cloves, minced
  • 3 cups potatoes, diced
  • 2 chicken bouillon cubes
  • 2 cups water
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups milk
  • 3 tablespoons flour
  • 1 tablespoon parsley

Recipe

  • 1 cook bacon, reserve drippings.
  • 2 saute green onions and garlic in drippings until tender.
  • 3 add the potatoes, bullion, water, salt and pepper.
  • 4 bring to a boil.
  • 5 simmer, covered for 20 minutes, or until potatoes are tender.
  • 6 whisk together milk, flour and parsley.
  • 7 stir into potato mixture.
  • 8 cook until thick.
  • 9 add bacon and serve.
