Irish Stew

Total Time: 2 hrs Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 1 lb lean lamb, cubed
  • 2 medium onions, sliced thinly
  • 2 lbs potatoes, sliced
  • salt & freshly ground black pepper, to taste
  • 1 tsp.dried thyme
  • 10 ounces lamb stock
  • chopped fresh parsley

Recipe

  • 1 preheat oven to 350°f
  • 2 put alternate layers of lamb, onion and potato in a casserole, season with salt and pepper and thyme, finishing with a layer of potato. pour lamb stock over top.
  • 3 cover and cook for about 2 1/2 hours.
  • 4 serve, sprinkled with parsley.
