Herb Crusted Lamb Tenderloin

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 1/2 cups breadcrumbs
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1 tablespoon olive oil
  • 2 (1 lb) lamb tenderloin

Recipe

  • 1 stir together first five ingredients.
  • 2 brush tenderloin with olive oil and roll in the crumb mixture until completely covered.
  • 3 roast at 425° for about 25 minutes or until meat thermometer reads 160.
  • 4 rest 10 minutes before slicing.
