Ingredients

- 1 1/2 cups breadcrumbs
- 1 teaspoon dried basil
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1/2 teaspoon dried thyme
- 1 tablespoon olive oil
- 2 (1 lb) lamb tenderloin
Recipe
- 1 stir together first five ingredients.
- 2 brush tenderloin with olive oil and roll in the crumb mixture until completely covered.
- 3 roast at 425° for about 25 minutes or until meat thermometer reads 160.
- 4 rest 10 minutes before slicing.
