Honey-garlic Marinated Lamb Loin

Total Time: 1 hr 50 mins Preparation Time: 10 mins Cook Time: 1 hr 40 mins

Ingredients

  • Servings: 10
  • 3/4 cup honey
  • 3/4 cup lemon juice
  • 3 tablespoons dry sherry
  • 6 cloves garlic, minced
  • 6 tablespoons soy sauce
  • 1 boneless lamb loin roast (3-to 31/2 pound)

Recipe

  • 1 combine lemon juice, honey, soy sauce, dry sherry and garlic together adding the roast in a large shallow dish.
  • 2 cover and chill for at least 8 hours, turning roast occasionally.
  • 3 bake at 325 degrees for 1 hour and 40 minutes marinate for 8 hours note: meat thermometer should read 160 in the thickest portion of meat.
