Honey Spice-rubbed Lamb Tenderloin

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1/4 cup catalina dressing, divided
  • 1 (1 lb) lamb tenderloin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dry mustard
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried thyme leaves
  • 1 tablespoon honey

Recipe

  • 1 brush 2 tablespoons of the catalina dressing over lamb.
  • 2 mix dry ingredients; rub onto lamb.
  • 3 let stand 10 min (flavor is just fine w/o marinading for long) or refrigerate up to 24 hours to marinate.
  • 4 preheat grill to medium heat.
  • 5 place lamb on grill; cover.
  • 6 grill 20 min., turning occasionally.
  • 7 mix remaining 2 tablespoons dressing and honey.
  • 8 brush some of the honey mixture over lamb.
  • 9 continue grilling 5 to 10 min., turning and brushing with honey mixture until lamb is cooked through (160°f.).
  • 10 let stand, covered with foil, a few minutes before slicing.
