Irish Stew With Guinness, Potatoes And Sausage

Ingredients
- Servings: 6
- 8 thick slices-hickory smoked bacon
- 8 fresh lamb sausages
- 2 garlic cloves
- 2 large onions, julienne
- 4 medium sized yukon gold potatoes
- 1 lb cremini mushroom
- 1 1/2 cups beef broth
- 1 (11 1/4 ounce) bottle guinness stout (beer)
- 2 tablespoons fresh thyme
- 2 tablespoons unsalted butter
Recipe
- 1 quarter the potatoes, and blanch until just tender.
- 2 brown sausage and bacon.
- 3 sauté garlic, onions, potatoes, and mushrooms in butter.
- 4 place the sausages, bacon, and vegetable mixture in large pot.
- 5 add the broth and guinness stout and bring to a simmer.
- 6 cover and simmer at least 1 hour.
- 7 finish with thyme, salt, pepper, and butter.
- 8 serve as a stew with irish soda bread or other hearty bread.
