Mandarin Lamb And Wild Rice

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 (5 ounce) boneless lamb loin chops, cut into strips (3/4 inch thick)
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 (11 ounce) can mandarin oranges
  • 1 1/2 cups water
  • 1 (6 1/4 ounce) package quick-cooking long grain and wild rice mix
  • 1/4 cup thinly sliced green onion

Recipe

  • 1 sprinkle lamb with pepper and salt.
  • 2 in a large skillet, brown lamb in oil.
  • 3 meanwhile, drain oranges, reserving juice; set oranges aside.
  • 4 add water, rice mix with contents of seasoning packet, onions and reserved juice to the skillet.
  • 5 bring to a boil.
  • 6 reduce heat; cover and simmer for 10-12 minutes or until liquid is absorbed.
