Mandarin Lamb And Wild Rice

Ingredients

- 4 (5 ounce) boneless lamb loin chops, cut into strips (3/4 inch thick)
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 1 tablespoon vegetable oil
- 1 (11 ounce) can mandarin oranges
- 1 1/2 cups water
- 1 (6 1/4 ounce) package quick-cooking long grain and wild rice mix
- 1/4 cup thinly sliced green onion
Recipe
- 1 sprinkle lamb with pepper and salt.
- 2 in a large skillet, brown lamb in oil.
- 3 meanwhile, drain oranges, reserving juice; set oranges aside.
- 4 add water, rice mix with contents of seasoning packet, onions and reserved juice to the skillet.
- 5 bring to a boil.
- 6 reduce heat; cover and simmer for 10-12 minutes or until liquid is absorbed.
