Mole Lamb

Ingredients

- 7 -8 lbs lamb shoulder
- 1 onion
- 1 green bell pepper
- 32 ounces chicken broth
- 12 ounces mole
- 8 ounces water
Recipe
- 1 slice onions and peppers. place into a slowcooker.
- 2 rinse roast. rub roast with salt and pepper. brown all sides of the roast in a heavy skillet.
- 3 place roast into slow cooker. add chicken broth, mole sauce and water. slow cook for 6 - 8 hours, until meat thermometer reads 170 degrees.
- 4 remove roast from cooker and allow to set for 30 minutes before slicing. serve with mole gravy from the slow cooker.
