Mole Lamb

Ingredients

  • Servings: 8
  • 7 -8 lbs lamb shoulder
  • 1 onion
  • 1 green bell pepper
  • 32 ounces chicken broth
  • 12 ounces mole
  • 8 ounces water

Recipe

  • 1 slice onions and peppers. place into a slowcooker.
  • 2 rinse roast. rub roast with salt and pepper. brown all sides of the roast in a heavy skillet.
  • 3 place roast into slow cooker. add chicken broth, mole sauce and water. slow cook for 6 - 8 hours, until meat thermometer reads 170 degrees.
  • 4 remove roast from cooker and allow to set for 30 minutes before slicing. serve with mole gravy from the slow cooker.
