- 1/4 cup dijon mustard
- 4 teaspoons honey
- 1 teaspoon apple cider or 1 teaspoon -wine vinegar
- 1/4 teaspoon black pepper
- 20 ounces bone-in loin lamb chops, 4 each about 1 inch thick
Recipe
- 1 whisk together marinade ingredients in small bowl or cup: mustard, honey, vinegar, and pepper.
- 2 transfer marinade to large zip lock plastic bag and add lamb. squeeze out air and seal bag. coat lamb completely with marinade by turning bag several times.
- 3 chill lamb in marinade 4 hours or overnight, turning bag occasionally.
- 4 preheat broiler. spray broiler rack with nonstick spray.
- 5 remove chops from bag and discard marinade. place chops on broiler rack and broil 5 inches from heat until browned and cooked through, about 6 minutes per side.
