Honey-mustard Lamb Tenderloins

Ingredients

- 2 1/2 lbs lamb tenderloin
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- cooking spray
- 1 teaspoon olive oil
- 1/4 cup balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon dijon mustard
- 1 teaspoon chopped fresh rosemary
- lemon wedge (optional)
- rosemary sprig (optional)
Recipe
- 1 preheat oven to 400.
- 2 trim fat from tenderloins, rub lamb with salt pepper.
- 3 coast a large nonstick skillet with cooking spray; add oil and place over medium high heat until hot. add lamb, and cook 10 minutes, turning and browning on all sides.
- 4 place lamb on a broiler pan coated with cooking spray. combine balsamic vinegar, honey and dijon mustard in a small bowl, and stir well with whisk. brush vinegar mixture over lamb. insert a meat thermometer into thickest portion of 1 tenderloin.
- 5 bake tenderloin at 400 for 30 minutes or until thermometer registers 160, basting frequently with vinegar mixture.
- 6 place tenderloins on a serving platter, and sprinkle with chopped fresh rosemary. garnish with lemon wedges and rosemary sprigs, if desired.
