Honey-mustard Lamb Tenderloins

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 1/2 lbs lamb tenderloin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • cooking spray
  • 1 teaspoon olive oil
  • 1/4 cup balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon dijon mustard
  • 1 teaspoon chopped fresh rosemary
  • lemon wedge (optional)
  • rosemary sprig (optional)

Recipe

  • 1 preheat oven to 400.
  • 2 trim fat from tenderloins, rub lamb with salt pepper.
  • 3 coast a large nonstick skillet with cooking spray; add oil and place over medium high heat until hot. add lamb, and cook 10 minutes, turning and browning on all sides.
  • 4 place lamb on a broiler pan coated with cooking spray. combine balsamic vinegar, honey and dijon mustard in a small bowl, and stir well with whisk. brush vinegar mixture over lamb. insert a meat thermometer into thickest portion of 1 tenderloin.
  • 5 bake tenderloin at 400 for 30 minutes or until thermometer registers 160, basting frequently with vinegar mixture.
  • 6 place tenderloins on a serving platter, and sprinkle with chopped fresh rosemary. garnish with lemon wedges and rosemary sprigs, if desired.
