Hearty Party Pozole

Ingredients
- 1 lb lean boneless lamb loin (diced in 1/2 inch pieces)
- 1/4 teaspoon pepper
- 2 tablespoons vegetable oil, divided
- 1 large onion, chopped
- 4 garlic cloves, finely chopped
- 1 tablespoon chili powder
- 1/2 teaspoon ground cumin
- 3 (15 1/2 ounce) cans hominy, drained (mote blanco)
- 1 (14 1/2 ounce) can diced tomatoes, no-salt added, drained
- 1 (14 1/2 ounce) can reduced-sodium chicken broth
- 1 (4 1/2 ounce) can chopped mild green chilies
- finely sliced green onion, for garnish
Recipe
- 1 season lamb with pepper. heat 1 tablespoon vegetable oil in a large saucepan over high heat. add lamb and cook and stir until lamb is no longer pink. transfer lamb to a clean plate. reduce heat to medium. add remaining tablespoon vegetable oil, onion and garlic. cook and stir about 5 minutes, or until softened and golden. stir in chili powder and cumin. add hominy, tomatoes, chicken broth and chiles, and bring to a boil. add lamb, reduce heat, and simmer for about 10 minutes until lamb is cooked to desired doneness. to garnish, serve with green onions.
