Irishman's Omelet

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 1
  • 3 slices bacon, rind trimmed and chopped in small pieces
  • 3/4 cup chopped onion
  • 1 medium potato, peeled, boiled & diced
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 2 eggs

Recipe

  • 1 fry the bacon until crisp and remove to a plate.
  • 2 drain most of the bacon grease from the pan.
  • 3 fry the onion in the remaining bacon fat until translucent.
  • 4 add potatoes, bacon, herbs.
  • 5 salt & pepper to taste.
  • 6 pour in the eggs cover and cook over medium heat until the eggs are set.
  • 7 flip onto a plate and serve.
