Irishman's Omelet

Ingredients

- 3 slices bacon, rind trimmed and chopped in small pieces
- 3/4 cup chopped onion
- 1 medium potato, peeled, boiled & diced
- 1 tablespoon fresh parsley, chopped
- 2 tablespoons fresh chives, chopped
- 2 eggs
Recipe
- 1 fry the bacon until crisp and remove to a plate.
- 2 drain most of the bacon grease from the pan.
- 3 fry the onion in the remaining bacon fat until translucent.
- 4 add potatoes, bacon, herbs.
- 5 salt & pepper to taste.
- 6 pour in the eggs cover and cook over medium heat until the eggs are set.
- 7 flip onto a plate and serve.
