Mama C's Jambalaya

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • Servings: 4
  • 2 tablespoons bacon drippings
  • 1 1/2 tablespoons flour
  • 2 small yellow onions, coarsely chopped
  • 2 garlic cloves, minced
  • 2 cups ham, chopped
  • 1 cup long grain rice
  • 1 (14 1/2 ounce) can diced tomatoes with juice
  • 1 3/4 cups water
  • 2 1/2 teaspoons creole seasoning (to taste)

Recipe

  • 1 melt bacon drippings in saucepan.
  • 2 add flour and blend thoroughly.
  • 3 cook, stirring, over medium heat until lightly browned.
  • 4 add onion and continue to cook, stirring frequently, until onion is translucent and flour is browned.
  • 5 add garlic and cook for one minute more.
  • 6 add remaining ingredients and stir thoroughly to combine.
  • 7 bring to a simmer, cover and cook about 40 minutes, or until most of the liquid is absorbed and rice is done.
