Mama C's Jambalaya

Ingredients
- Servings: 4
- 2 tablespoons bacon drippings 
- 1 1/2 tablespoons flour 
- 2 small yellow onions, coarsely chopped 
- 2 garlic cloves, minced 
- 2 cups ham, chopped 
- 1 cup long grain rice 
- 1 (14 1/2 ounce) can diced tomatoes with juice 
- 1 3/4 cups water 
- 2 1/2 teaspoons creole seasoning (to taste) 
Recipe
- 1 melt bacon drippings in saucepan. 
- 2 add flour and blend thoroughly. 
- 3 cook, stirring, over medium heat until lightly browned. 
- 4 add onion and continue to cook, stirring frequently, until onion is translucent and flour is browned. 
- 5 add garlic and cook for one minute more. 
- 6 add remaining ingredients and stir thoroughly to combine. 
- 7 bring to a simmer, cover and cook about 40 minutes, or until most of the liquid is absorbed and rice is done.
