Mexican Meatballs

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 14 ounces ground lean lamb
  • 1/2 cup grated zucchini
  • 1/2 cup crushed tortilla chips
  • 1/2 cup scallion, chopped
  • 1/4 cup cilantro
  • 1 egg
  • 1 teaspoon minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 10 ounces enchilada sauce

Recipe

  • 1 mix all ingredients together. roll into 24 meatballs. brown in a little oil in a large nonstick skillet. add enchilada sauce. cover, simmer 5 minutes or until meatballs are cooked.
