Ingredients

- 14 ounces ground lean lamb
- 1/2 cup grated zucchini
- 1/2 cup crushed tortilla chips
- 1/2 cup scallion, chopped
- 1/4 cup cilantro
- 1 egg
- 1 teaspoon minced garlic
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 10 ounces enchilada sauce
Recipe
- 1 mix all ingredients together. roll into 24 meatballs. brown in a little oil in a large nonstick skillet. add enchilada sauce. cover, simmer 5 minutes or until meatballs are cooked.
