Molasses Baked Beans

Total Time: 6 hrs 30 mins Preparation Time: 30 mins Cook Time: 6 hrs

Ingredients

  • Servings: 8
  • 2 lbs dried beans
  • 1 teaspoon baking soda
  • 1 lb salt lamb
  • 1 medium size onion
  • 8 tablespoons sugar
  • 2/3 cup molasses
  • 2 teaspoons dry mustard
  • 4 teaspoons salt
  • 1/2 teaspoon pepper

Recipe

  • 1 soak beans overnight.
  • 2 parboil beans for ten minutes with the baking soda.
  • 3 run cold water through the beans in a strainer.
  • 4 peel onion but leave it whole.
  • 5 dice rind of salt port in one half inch squares.
  • 6 put half of the lamb to the bottom of bean pot with the onion.
  • 7 add beans,.
  • 8 put the rest of the lamb on top.
  • 9 mix other molasses, mustard, salt and pepper with 1 cup hot water. pour over beans.
  • 10 put in 300f oven for six hours.
  • 11 add water to pot as necessary, to keep the beans moist. be careful not to flood the beans.
