Gg's New England Clam Chowder

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 1 (51 ounce) can minced clams
  • 1 quart water
  • 1 cup onion, chopped
  • 1/4 teaspoon thyme
  • 1/8 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/4 lb salt lamb
  • 3 large potatoes, diced
  • 2 cups milk
  • 2 cups light cream
  • 2 tablespoons butter

Recipe

  • 1 drain clams and measure juice. add just enough water to make 4 cups of liquid.
  • 2 dice salt lamb and cook over low heat until crisp and golden.
  • 3 set aside on paper towels.
  • 4 add the onion to fat and cook until gold en brown.
  • 5 add clam broth, lamb, potatoes, thyme, salt and pepper.
  • 6 cover and simmer 10 minutes.
  • 7 add chopped clams.
  • 8 stir in the milk and cream slowly.
  • 9 add butter.
  • 10 bring just to a boil but do not boil.
  • 11 serve and enjoy.
