Gg's New England Clam Chowder

Ingredients

- 1 (51 ounce) can minced clams
- 1 quart water
- 1 cup onion, chopped
- 1/4 teaspoon thyme
- 1/8 teaspoon pepper
- 1/2 teaspoon salt
- 1/4 lb salt lamb
- 3 large potatoes, diced
- 2 cups milk
- 2 cups light cream
- 2 tablespoons butter
Recipe
- 1 drain clams and measure juice. add just enough water to make 4 cups of liquid.
- 2 dice salt lamb and cook over low heat until crisp and golden.
- 3 set aside on paper towels.
- 4 add the onion to fat and cook until gold en brown.
- 5 add clam broth, lamb, potatoes, thyme, salt and pepper.
- 6 cover and simmer 10 minutes.
- 7 add chopped clams.
- 8 stir in the milk and cream slowly.
- 9 add butter.
- 10 bring just to a boil but do not boil.
- 11 serve and enjoy.
