Honey Lemon Schnitzel

- 4 lamb cutlets
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons butter
- 1/4 cup lemon juice
- 1/4 cup honey
Recipe
- 1 combine the flour, salt and pepper in a large plastic bag.
- 2 add lamb, two pieces at a time, shake to coat.
- 3 cook lamb in butter in large skillet over medium heat for 3-4 minutes on each side or until juices run clear. remove and keep warm.
- 4 add lemon juice and honey to the skillet; cook and stir for 3 minutes or until thickened. return lamb to pan . cook 2-3 minutes longer or until heated through.
