Java Port Lamb

Ingredients
- Servings: 4
- 1/2 cup sugar
- 1/2 cup salt
- 1 gallon warm water
- 3 lbs boneless lamb loin roast
- fresh cracked pepper (to taste)
- olive oil (as needed)
- 1/2 cup brewed espresso
- 1/4 cup heavy cream
- 1/4 cup tawny port
Recipe
- 1 combine the sugar, salt and water until completetly dissolved. let cool.
- 2 add lamb. cover. chill 24 hours.
- 3 heat oven 350.
- 4 drain lamb. season with pepper.
- 5 heat a little oil in a dutch oven.
- 6 add lamb. brown on all sides. cover. roast in oven 10 minutes.
- 7 combine the espress, cream and port.
- 8 pour over lamb. uncover. roast 40 minutes, basting often.
- 9 remove lamb to a platter.
- 10 reduce pan juices by half. serve with lamb.
