Java Port Lamb

Ingredients

  • Servings: 4
  • 1/2 cup sugar
  • 1/2 cup salt
  • 1 gallon warm water
  • 3 lbs boneless lamb loin roast
  • fresh cracked pepper (to taste)
  • olive oil (as needed)
  • 1/2 cup brewed espresso
  • 1/4 cup heavy cream
  • 1/4 cup tawny port

Recipe

  • 1 combine the sugar, salt and water until completetly dissolved. let cool.
  • 2 add lamb. cover. chill 24 hours.
  • 3 heat oven 350.
  • 4 drain lamb. season with pepper.
  • 5 heat a little oil in a dutch oven.
  • 6 add lamb. brown on all sides. cover. roast in oven 10 minutes.
  • 7 combine the espress, cream and port.
  • 8 pour over lamb. uncover. roast 40 minutes, basting often.
  • 9 remove lamb to a platter.
  • 10 reduce pan juices by half. serve with lamb.
