Lime Marinated Lamb Tenderloin

Ingredients

- 1 1/2 lbs lamb tenderloin (2 total)
- 1/4 cup frozen limeade concentrate, thawed
- 1 tablespoon oil
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 butterfly each lamb tenderloin by cutting lengthwise 3/4 of the way through tenderloin, being careful not to cut through completely.
- 2 open tenderloins; place in ziplock bag.
- 3 in a small bowl, combine remaining ingredients and mix well.
- 4 pour over tenderloins and turn to coat.
- 5 seal bag and let marinate at room temperature 10 minutes.
- 6 cook on grill 12-15 minutes, turning once.
- 7 cut into serving-sized pieces.
