Lime Marinated Lamb Tenderloin

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs lamb tenderloin (2 total)
  • 1/4 cup frozen limeade concentrate, thawed
  • 1 tablespoon oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 butterfly each lamb tenderloin by cutting lengthwise 3/4 of the way through tenderloin, being careful not to cut through completely.
  • 2 open tenderloins; place in ziplock bag.
  • 3 in a small bowl, combine remaining ingredients and mix well.
  • 4 pour over tenderloins and turn to coat.
  • 5 seal bag and let marinate at room temperature 10 minutes.
  • 6 cook on grill 12-15 minutes, turning once.
  • 7 cut into serving-sized pieces.
