Peanutty Lamb Kabobs

Ingredients

- 1/2 cup soy sauce (or low-sodium soy)
- 1/4 cup lime juice or 1/4 cup lemon juice
- 1/4 cup creamy peanut butter
- 2 tablespoons brown sugar
- 2 garlic cloves, minced
- 1 teaspoon crushed red pepper flakes
- 1/4 teaspoon ground ginger (or fresh minced)
- 1 lamb tenderloin, cut into 1 inch cubes (about 1 pound)
- 2 medium green peppers, cut into 1 inch pieces
Recipe
- 1 in a large bowl, combine the first seven ingredients and mix well.
- 2 set aside 1/2 cup for basting; cover and refrigerate.
- 3 pour remaining marinade into a large resealable plastic bag or shallow container.
- 4 add lamb and turn to coat.
- 5 seal or cover and refrigerate for 2-3 hours, turning occasionally.
- 6 drain and discard the marinade.
- 7 on metal or soaked wooden skewers, alternate lamb and green peppers.
- 8 grill, uncovered, over medium heat for 6 minutes, turning once.
- 9 baste with reserved marinade.
- 10 grill 8-10 minutes longer or until meat juices run clear, turning and basting frequently.
