Mexican Lamb & Black Beans

Total Time: 9 hrs 15 mins Preparation Time: 15 mins Cook Time: 9 hrs

Ingredients

  • Servings: 4
  • 1 lb black beans, cooked
  • 1 lb boneless lamb sirloin, cut in 1 inch cubes
  • 1 teaspoon chili powder
  • 1 teaspoon ground coriander
  • 2 teaspoons salt
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 16 ounces stewed tomatoes, broken up
  • 2 cups water
  • fresh ground black pepper
  • fresh cilantro leaves

Recipe

  • 1 put beans in crockpot.
  • 2 toss lamb with chili powder, coriander and salt.
  • 3 lightly brown onion and garlic with lamb in ungreased skillet.
  • 4 mix tomatoes into crockpot with their juice.
  • 5 add meat, pepper and 2 cups water.
  • 6 cover and cook 9 hours on low.
  • 7 ladle over rice and garnish with cilantro.
