Mexican Lamb & Black Beans

Ingredients

- 1 lb black beans, cooked
- 1 lb boneless lamb sirloin, cut in 1 inch cubes
- 1 teaspoon chili powder
- 1 teaspoon ground coriander
- 2 teaspoons salt
- 1 onion, chopped
- 1 clove garlic, minced
- 16 ounces stewed tomatoes, broken up
- 2 cups water
- fresh ground black pepper
- fresh cilantro leaves
Recipe
- 1 put beans in crockpot.
- 2 toss lamb with chili powder, coriander and salt.
- 3 lightly brown onion and garlic with lamb in ungreased skillet.
- 4 mix tomatoes into crockpot with their juice.
- 5 add meat, pepper and 2 cups water.
- 6 cover and cook 9 hours on low.
- 7 ladle over rice and garnish with cilantro.
