Leftovers Chicken Fried Rice

Ingredients

- 2 boneless skinless chicken breasts (baked, cubed)
- 3/4-1 cup frozen mixed vegetables
- 2 cups cooked rice, with frozen mixed vegetables mixed in
- 1 egg, beaten
Recipe
- 1 heat a little olive oil in a wok or deep skillet.
- 2 add egg and cook slightly. you want to cook it all the way through, but don't over cook it. you don't want it to brown in this stage.
- 3 remove egg, break it up and set aside.
- 4 add a little more oil.
- 5 reheat chicken in the pan.
- 6 add rice and egg and toss until heated through.
- 7 serve immediately.
