Leftovers Chicken Fried Rice

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 2 boneless skinless chicken breasts (baked, cubed)
  • 3/4-1 cup frozen mixed vegetables
  • 2 cups cooked rice, with frozen mixed vegetables mixed in
  • 1 egg, beaten

Recipe

  • 1 heat a little olive oil in a wok or deep skillet.
  • 2 add egg and cook slightly. you want to cook it all the way through, but don't over cook it. you don't want it to brown in this stage.
  • 3 remove egg, break it up and set aside.
  • 4 add a little more oil.
  • 5 reheat chicken in the pan.
  • 6 add rice and egg and toss until heated through.
  • 7 serve immediately.
