- 1 lb boneless lamb loin (cubed)
- 1 (20 ounce) jar salsa
- 1 (4 ounce) can green chilies
- 1 (15 ounce) can pinto beans (rinsed and drained)
- 1 cup cheddar cheese (shredded)
- 1/2 cup nonfat sour cream
Recipe
- 1 put lamb, salsa, chillis in cockpot. cover and cook on low heat 6 to 8 hours.
- 2 stir in beans and cook about 5 mins more.
- 3 serve over rice with shredded cheese and sour cream.
