Mexican Lamb

Total Time: 6 hrs 2 mins Preparation Time: 2 mins Cook Time: 6 hrs

Ingredients

  • Servings: 4
  • 1 lb boneless lamb loin (cubed)
  • 1 (20 ounce) jar salsa
  • 1 (4 ounce) can green chilies
  • 1 (15 ounce) can pinto beans (rinsed and drained)
  • 1 cup cheddar cheese (shredded)
  • 1/2 cup nonfat sour cream

Recipe

  • 1 put lamb, salsa, chillis in cockpot. cover and cook on low heat 6 to 8 hours.
  • 2 stir in beans and cook about 5 mins more.
  • 3 serve over rice with shredded cheese and sour cream.
