Mojo Lamb Roast

Ingredients

  • Servings: 4
  • 1 lb boneless lamb loin roast
  • 1/3 cup orange juice
  • 1/4 cup lime juice
  • 3 garlic cloves, minced
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano, crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 trim fat from meat.
  • 2 place meat in a plastic bag set in a shallow dish.
  • 3 for marinade, in a small bowl combine orange juice, lime juice, garlic, sugar and oregano.
  • 4 pour the marinade over the meat and seal the bag.
  • 5 marinate in the refrigerator overnight, turning bag occasionally.
  • 6 drain meat, discarding marinade.

  • 11 cover with foil; let stand for 10 minutes before slicing (the temperature of the meat after standing should be 160 degrees).
