Mexican Lamb Salad

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb boneless lamb loin
  • 4 cups shredded lettuce
  • 1 medium orange, peeled, sliced and cut into fourths
  • 1 small red onion, sliced and separated into rings
  • 1 medium avocado, peeled and chopped
  • 1 tablespoon vegetable oil
  • 1 teaspoon chili powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon dried oregano leaves
  • 1/4 teaspoon ground cumin

Recipe

  • 1 cut lamb into 1-inch pieces.
  • 2 place lettuce on serving platter.
  • 3 arrange orange, onion and avocado on lettuce.
  • 4 heat oil in 10-inch skillet.
  • 5 stir in chili powder, salt, oregano and cumin.
  • 6 add lamb; stir-fry over medium-high heat 5 to 7 minutes or until lamb is no longer pink.
  • 7 spoon hot lamb mixture over lettuce.
  • 8 pour pan juices over lamb if desired.
  • 9 serve immediately.
