Mexican Manicotti

Ingredients

- 1 1/2 lbs bulk lamb sausage
- 1/2 cup chopped onion
- 1 (16 ounce) can refried beans
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 (8 ounce) package manicotti, cooked and drained
- 1 (15 ounce) can tomato sauce
- 1 (4 ounce) can chopped green chilies (optional)
- 2 cups cheddar cheese
Recipe
- 1 in a skillet, cook sausage and onion until sausage is no longer pink and onion is tender; drain. stir in beans, chili powder and cumin. stuff into manicotti shells; place in a greased 9 x 13 x 2 inch baking dish.
- 2 combine tomato sauce and chilies if desired; pour over manicotti. sprinkle with cheese. bake, uncovered, at 350 degrees for 45 minutes or until heated through.
