Mexican Manicotti

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs bulk lamb sausage
  • 1/2 cup chopped onion
  • 1 (16 ounce) can refried beans
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 (8 ounce) package manicotti, cooked and drained
  • 1 (15 ounce) can tomato sauce
  • 1 (4 ounce) can chopped green chilies (optional)
  • 2 cups cheddar cheese

Recipe

  • 1 in a skillet, cook sausage and onion until sausage is no longer pink and onion is tender; drain. stir in beans, chili powder and cumin. stuff into manicotti shells; place in a greased 9 x 13 x 2 inch baking dish.
  • 2 combine tomato sauce and chilies if desired; pour over manicotti. sprinkle with cheese. bake, uncovered, at 350 degrees for 45 minutes or until heated through.
