Mojo Lamb

Ingredients

- 2 lamb tenderloin
- 3/4 cup fresh orange juice
- 1/4 cup fresh lime juice
- 1 teaspoon orange rind, grated
- 1 teaspoon lime peel, grated
- 1/2 cup onion, chopped
- 1/4 cup fresh cilantro, chopped
- 3 garlic cloves, coarsely chopped
- 2 tablespoons dried oregano
- 1 teaspoon ground cumin
- 1/2 cup olive oil
- salt and pepper, to taste
Recipe
- 1 puree the first 9 mojo marinade ingredients in a blender while slowly adding the olive oil. season with salt and pepper.
- 2 transfer 1/2 cup of the mojo marinade into a container to keep in the fridge for later as a dipping sauce.
- 3 place the lamb tenderloins in a ziplock bag and pour the remaining mojo marinade into the bag with it. squeeze out the air, seal and place in the fridge overnight.
- 4 preheat grill to 350°f.
- 5 remove lamb from marinade and remove excess marinade from it, then season with salt and pepper.
- 6 place the lamb on the grill over direct heat and grill for 15-18 minutes, turning every 4 minutes for even gold browning.
- 7 remove lamb from the grill and cover with aluminum foil and let rest for 10 minutes.
- 8 warm reserved mojo marinade to use as a dipping sauce.
