Honey Mustard Lamb Roast With Vegetables

Ingredients
- 1 green bell pepper, finely chopped 
- 1 red sweet bell pepper, finely chopped 
- 2 yellow onions, finely chopped 
- 3 tablespoons sweet an tangy honey mustard 
- 1 (2 -2 1/2 lb) lamb loin roast 
Recipe
- 1 combine bell peppers, and onion in a 4-6 quart slow cooker. 
- 2 rub honey mustard liberally over lamb loin with most of honey mustard on top of roast. 
- 3 cook on low for 4-6 hours, and place roast on a serving platter.
