Louise's Sweet N’ Sour Lamb

Ingredients

  • Servings: 5
  • 1 1/2 lbs lean lamb shoulder (thinly sliced) or 1 1/2 lbs side lamb (thinly sliced)
  • 2 tablespoons bacon fat
  • 1 (19 ounce) can pineapple chunks
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1/3 cup vinegar
  • 1 tablespoon soya sauce
  • 1/4 cup brown sugar
  • 3/4 cup green pepper, thinly sliced
  • 2 tablespoons cornstarch
  • 1/2 cup onion, thinly sliced

Recipe

  • 1 cook meat the night before in hot bacon fat until brown.
  • 2 drain pineapple (keep syrup).
  • 3 combine water, brown sugar and vinegar, corn starch, salt, soya sauce and 3/4 to 1 cup of pineapple syrup.
  • 4 cook until clear and slightly thickened (2 minutes).
  • 5 add meat, cook covered over low heat, for 1 hour or until tender. refrigerate 30 minutes.
  • 6 before serving, heat mixture until hot.
  • 7 add green peppers, pineapple and onions.
  • 8 cook for 2 minutes.
  • 9 serve with hot fluffy rice.
