Peggy's Broccoli Salad

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 10 slices bacon (i used less bacon, 5 slices)
  • 1 head fresh broccoli, cut into bite sized pieces
  • 1/4 cup red onion, chopped
  • 1/2 cup raisins
  • 3 tablespoons wine vinegar
  • 2 tablespoons sugar or 2 tablespoons splenda sugar substitute
  • 1 cup mayonnaise (i used light mayonnaise)
  • 1 cup sunflower seeds or 1 cup sliced almonds

Recipe

  • 1 place bacon in a large, deep skillet.
  • 2 cook over medium heat until evenly brown.
  • 3 remove bacon to paper towel,cool.
  • 4 crumble bacon and set aside.
  • 5 in a medium bowl, combine broccoli,onion and raisins.
  • 6 in a small bowl, whisk together the vinegar, sugar and mayonnaise.
  • 7 pour over broccoli mixture, and toss until well mixed.
  • 8 refrigerate at least two (2) hours.
  • 9 before serving, toss salad with crumbled bacon and nuts.
  • 10 enjoy.
