Northern China Steamed Egg Custard

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 1 tablespoon oil
  • 1/2 cup ground beef or 1/2 cup lamb, tightly packed
  • 3 tablespoons chopped scallions
  • 2 teaspoons soy sauce
  • 4 eggs, beaten
  • 1 1/2 cups clear broth

Recipe

  • 1 heat the oil in a small skillet. add the meat, scallions and soy sauce and stir-fry for 2 minutes.
  • 2 whisk the eggs and broth together.
  • 3 place the meat mixture into a microwave safe bowl. pour the egg/broth over the meat mixture.
  • 4 cover and microwave on high for 5 minutes. if not firm, microwave for additional 30 seconds.
