Kibbeh Meatballs With Spiced Yogurt Sauce

Total Time: 1 hr 15 mins Preparation Time: 45 mins Cook Time: 30 mins

Ingredients

  • 1 1/2 cups nonfat greek yogurt
  • 1 cup cucumber, shredded and seeded
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic, minced
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 3/4 cup uncooked bulgur
  • 2 cups cold water
  • 1 lb lean ground lamb
  • 1/4 cup shallot, minced
  • 1/4 cup fresh parsley, minced
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground red pepper
  • 1 tablespoon olive oil

Recipe

  • 1 combine first 6 ingredients; chill.
  • 2 combine bulgur and water in medium bowl. let stand 30 min; drain bulgur through fine sieve; pressing out excess liquid. combine bulgur, lamb, and next 7 ingredients in food processor; process just until smooth. cover and chill for 30 minute form into 20 (2 1/2 inch) football shaped meatballs.
  • 3 heat oil in nonstick skillet over med-high. add meatballs to pan; cook 12 min, browning on all sides. serve with sauce.
