Mixed Grill Satay

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • 6 boneless lamb chops, partially frozen
  • 1/2 cup bottled teriyaki marinade
  • 1/2 cup peanut butter
  • 1/4 cup brown sugar
  • 1/4 cup water
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons soy sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon powdered ginger
  • 1/8 teaspoon cayenne pepper
  • 1 1/2 cups cucumbers, thinly sliced
  • 1 green onion, thinly sliced
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 18 wooden skewers (6 inches each, soaked in water for 1 hour)

Recipe

  • 1 thinly slice lamb chops.
  • 2 thread onto skewers accordion style.
  • 3 place in shallow baking dish; pour marinade over meat.
  • 4 refrigerate covered 2 hours or overnight; turning occasionally.
  • 5 grill over medium coals 10 minutes or until cooked through, turning every 3-4 minutes.
  • 6 for dipping sauce, combine ingredients in bowl; mix with wire wisk until blended. makes approximately 1 cup.
  • 7 for salad, toss cucumbers with remaining ingredients.
  • 8 makes 1-1/2 cups.
  • 9 serve with peanut dipping sauce and cucumber salad.
