Mixed Grill Satay

Ingredients
- 6 boneless lamb chops, partially frozen
- 1/2 cup bottled teriyaki marinade
- 1/2 cup peanut butter
- 1/4 cup brown sugar
- 1/4 cup water
- 2 tablespoons rice wine vinegar
- 2 tablespoons soy sauce
- 1/4 teaspoon garlic powder
- 1/4 teaspoon powdered ginger
- 1/8 teaspoon cayenne pepper
- 1 1/2 cups cucumbers, thinly sliced
- 1 green onion, thinly sliced
- 2 tablespoons rice wine vinegar
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 18 wooden skewers (6 inches each, soaked in water for 1 hour)
Recipe
- 1 thinly slice lamb chops.
- 2 thread onto skewers accordion style.
- 3 place in shallow baking dish; pour marinade over meat.
- 4 refrigerate covered 2 hours or overnight; turning occasionally.
- 5 grill over medium coals 10 minutes or until cooked through, turning every 3-4 minutes.
- 6 for dipping sauce, combine ingredients in bowl; mix with wire wisk until blended. makes approximately 1 cup.
- 7 for salad, toss cucumbers with remaining ingredients.
- 8 makes 1-1/2 cups.
- 9 serve with peanut dipping sauce and cucumber salad.
