Hoisin-maple Lamb Tenderloin

Ingredients
- Servings: 6
- 1/2 cup maple syrup 
- 1/4 cup hoisin sauce 
- 2 tablespoons sesame oil 
- 2 lamb tenderloin, 3/4 to 1 lb. each 
- 3 cloves garlic, peeled and halved 
- 1 medium onion, sliced 
-  salt 
-  fresh ground pepper 
Recipe
- 1 preheat oven to 450°. 
- 2 line a roasting pan with aluminum foil or parchment paper. 
- 3 in a small bowl, stir together maple syrup, hoisin sauce and sesame oil. 
- 4 set aside. 
- 5 rub each lamb tenderloin with cut side of garlic slice. 
- 6 spread onion slices and garlic in center of roasting pan. 
- 7 place tenderloins, side by side but not touching, on onion mixture. 
- 8 sprinkle lamb lightly with salt and black pepper. 
- 9 bake 10 minutes. 
- 10 reduce oven temperature to 375°. 
- 11 spoon maple syrup mixture over lamb, covering it evenly. 
- 12 bake 20 to 25 minutes longer, basting once. 
- 13 outside of meat should be well-browned. 
- 14 let lamb rest 10 minutes.
