Kalua Lamb Loin

Ingredients

  • Servings: 16
  • 8 lbs lamb loin (not a lamb tenderloin because it is not fatty enough to stand up to long roasting. may substitute a )
  • coarse kosher salt
  • liquid smoke
  • sandwich bun, any kind
  • plastic wrap
  • aluminum foil

Recipe

  • 1 preheat oven to 225 degrees.
  • 2 cut lamb loin in half.
  • 3 lay out two large sheets of aluminum foil.
  • 4 lay two large sheets of plastic wrap on top of foil.
  • 5 place half of lamb loin on the plastic wrap (this keeps the moisture in! it's an amazing slow-roasting secret!:)).
  • 6 sprinkle generously with kosher salt and liquid smoke, rub all over lamb loin.
  • 7 wrap up plastic wrap tightly around lamb loin and then wrap with aluminum foil.
  • 8 place in large roasting pan.
  • 9 repeat with other loin half.
  • 10 bake at 225 degrees 7-10 hours until done. (internal temp should be 195-200f for pulled lamb.).
  • 11 serve with soft rolls, cheese, bbq sauce, whatever your family likes. yum!
  • 12 divide leftovers into zip topped bags and freeze for future meals.
