Kalua Lamb Loin

Ingredients

- 8 lbs lamb loin (not a lamb tenderloin because it is not fatty enough to stand up to long roasting. may substitute a ) 
-  coarse kosher salt 
-  liquid smoke 
-  sandwich bun, any kind 
-  plastic wrap 
-  aluminum foil 
Recipe
- 1 preheat oven to 225 degrees. 
- 2 cut lamb loin in half. 
- 3 lay out two large sheets of aluminum foil. 
- 4 lay two large sheets of plastic wrap on top of foil. 
- 5 place half of lamb loin on the plastic wrap (this keeps the moisture in! it's an amazing slow-roasting secret!:)). 
- 6 sprinkle generously with kosher salt and liquid smoke, rub all over lamb loin. 
- 7 wrap up plastic wrap tightly around lamb loin and then wrap with aluminum foil. 
- 8 place in large roasting pan. 
- 9 repeat with other loin half. 
- 10 bake at 225 degrees 7-10 hours until done. (internal temp should be 195-200f for pulled lamb.). 
- 11 serve with soft rolls, cheese, bbq sauce, whatever your family likes. yum!
